Chai Banana Bread


 

Banana Bread

2 over ripe bananas

40gplain flour

260g self raising flour

1 tsp ground cinnamon

120g panella

130ml of chai tea (w almond milk)

30g  crushed walnuts

Poppy seeds

Pepitas

Chai

20g chai boy chai

100ml of water

200ml of almond milk

 

Method

Preheat oven to 180°C and grease a small loaf pan.

Brew your Chai Boy in 100ml of boiled water (from the kettle is fine) for 3min. Strain out the liquid, add the almond milk and set aside. Sift the combined flours and cinnamon into a large bowl. Stir in the panella and make a well in the centre. Place the chai, eggs, melted butter and banana in a medium bowl, and stir until well combined. Add the crushed walnuts and banana mixture to the flour mixture and stir until just combined. Spoon the mixture into the prepared pan and smooth the surface.

Bake in preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and set aside in the pan for 5 minutes. Turn onto a wire rack to cool completely. Cut into slices to serve.
